So my sister is in a group of women who get together and bake with all food storage. They've managed to compile a few recipes and here's what they've come up with, in addition to Wendy Jacobs' wheat cookie recipe. Enjoy!
BREAKFAST
1. Pancakes
Mix: 3 eggs (reconstituted from powder)
2 1/2 C. milk (pre-mixed powdered milk)
1 tsp. vanilla
2 Tbsp. sugar
In a separate bowl mix:
3 C. whole wheat flour
1 tsp. salt
5 tsp. baking powder
Combine dry ingredients with wet ones. ADD 1/4 c. vegetable oil and whisk until smooth. Preheat skillet to mediumheat, (using a nonstick cooking surface is ideal, otherwise lightly grease). Cook batter rounds, constantly checking to prevent burning (they don't bubble up like the white flour pancakes do). Flip them and wait for the other side to turn golden brown. Remove cooked pancakes to wire racks to prevent pancakes from becoming soggy.
2. Waffles
2 C. flour (1 C. white and 1 C. wheat)
4 tsp. baking powder
1/2 tsp. salt
2 Tbsp. honey or sugar
1 3/4 C. milk (2/3 C. nonfat dry milk and 1 3/4 C. water)
4 Tbsp. salad oil
2 eggs (can use whole egg powder, with correct amount of water)
Mix dry ingredients together, including nonfat dry milk and whole egg powder (if using). Stir in remaining ingredients. For lighter waffles, separate eggs. Beat egg whites and carefully fold in.
3. Oatmeal Packets
Blend 1/2 C. of oats until powdery. Into each of 10 ziplock sandwich bags, combine:
1/4 C. regular oats
2 Tbsp. powdery oats
1 1/16 tsp. salt
1 Tbsp. packed brown sugar
1/2 Tbsp. granulated sugar
To EAT:
POUR contents of bag into a large cup. ADD 2/3 C. water (more or less as desired; 1/2 C. if making on a stove top). Mix and microwave 90 seconds on high. Remove from microwave and stir. Yummy with milk over it.
Variations: To each packet add:
Apple Cinnamon: 1 Tbsp. sugar, 1/4 tsp. cinnamon, 2 Tbsp. chopped, dried apples
Cinnamon - Spice: 1 Tbsp. sugar, 1/4 tsp. cinnamon, 1/8 tsp. nutmeg
Raisins & Brown Sugar: 1 Tbsp. packed brown sugar, 1 Tbsp. raisins
Wheat Germ: 2 Tbsp. any kind of wheat germ
